Definitely Not Whole30 or Paleo, But Easy and Quick

 

If you’re new here, we are not chefs. We don’t love to cook and it’s a struggle to get our kids to eat anything! We don’t have a a gift or a love for cooking, but we’ve made it part of our new year goals to get back into the kitchen a bit more. And if it’s quick, easy, and has minimal ingredients, that’s something we can get behind. Most of the easier recipes we’ve found involve a Crockpot, InstantPot, or just a regular ol’ casserole dish and an oven and we LOVE that. Here are a few we tried out this week and our kids LOVED them.

 

BREAKFAST CASSEROLE

 

This has been a family favorite since I was a little girl, but my mom only made it on Christmas Eve. However, when I had my own kids, I scored the recipe from my mama and I make it often! This recipe from allrecipes is the closest I can find. Our kids love it and we can eat on it for at least two days! Total hit.

 

 

MEXICAN TATER TOT CASSEROLE

This is one we have yet to try, but our girlfriend Corey says it’s a hit at her house! And we can see why! Kids get their beans, their dairy, and their protein! Even some veggies with the corn! What’s not to love? This is on our list for this week and looks super simple.

 

 

 

 

CROCK POT CHEESY CHICKEN, BACON, & TATER TOT BAKE

Believe it or not, my DAD gave us this recipe. We tried it out this week and the hubby and kids have been asking for seconds! It’s the easiest prep time and minimal ingredients. Just set it and forget it!
